Mediterranean Upside Down Eggplant Tart! 🍆🍅
1- Grill thin slices of eggplant (I sprinkle some olive oil, salt and pepper and grill inside an oven);
2- Layer then in the bottom of a pie dish;
3- Place a layer of slices tomato on top of them;
4- Sprinkle dried #oregano , #basil , #thyme , parmesan cheese and #olive oil;
5- Roll puff pastry and place over tomatoes, tucking edges into sides of the dish;
6- Bake at 425 degrees for 25 minutes or until the crust is golden brown and flaky;
7- Run a knife around edges of the dish and invert tart onto a cutting board or serving plate.
