Mexican Quinoa Salad with Chicken Asada

My Mexican Quinoa Salad with Chicken  Asada Recipe:

Hi everyone! today’s I’m sharing a new Mexican salad with roasted chicken carna asada recipe I have tried over the weekend and I absolutely loved it. Living in LA we love and eat Mexican food a lot and after trying this salad recipe I was very happy with the result. Hope you envoy this recipe and as always I’d love to hear from you 🙂

 Ingredients (for 4 servings):

For the quinoa salad:

  • two cups of cooked black bean
  • two cups of cooked corn
  • two cups of cooked quinoa
  • one bunch of spring onion (scallions)
  • one bunch of cilantro
  • one big jalapeno
  • 4 limes
  • three tomatoes
  • one avocado (optional)

For Chicken Asada:

  • 4 chicken breast or thighs
  • cumin
  • lime juice
  • paprika
  • taco seasoning
  • salt and pepper
  • chili
  • garlic powder
  • onion powder
  • olive oil

Instructions:

For the carna asada chicken: Mix the spices (I honestly didn’t measure them but I put almost the same amount f each spice) and marinate the chicken with the olive oil over night.

The next day, add the lime juice and more salt and grill the chicken until completely cooked.

For the Mexican quinoa salad: chopped the vegetable in small cubes and add the cooked (and cooled) ingredients and squeeze some lime juice on top of it. serve with Chicken and avocado.
