Carrot Cake with Creme Cheese Frosting Recipe

Ingredients for carrot cake:

5 eggs (egg whites and yolks should be separated)
Sugar 275 gr (1 cup and two table spoons)
Almond Powder 240 gr (1.8 cups)
Self raising flour (or all purpose flour) 75 gr (1/2 cup)
grated carrots 480 gr (one pound)
Lemon zest 1 tea spoon
Baking powder 1/2 table spoon
Sliced almonds 2 table spoons

Ingredients for Cream Cheese Frosting:

Creme cheese 100 gr
melted butter 80 gr
icing sugar 80 gr
lemon juice 1 tea spoon


Preheat the oven at 180 centigrade (350 Fahrenheit)
Mix egg yolks with sugar, lemon zest and sugar;
Add in grated carrots, almond power, flour and baking powder;
Beat egg whites until stiff peaks form;
incorporate egg whites to the mixture;
Pour the mixture into a pan and bake it for about 95 minutes;
Let it cool down for 5 minutes before removing the pan;
Prepare the frosting by mixing creme cheese, butter, icing sugar and lemon juice;
Cover the cool cake with the frosting and sprinkle some sliced almonds on the top.
