Upside-down Citrus Cake

Upside-down Citrus Cake Recipe

Ingredients for the Citrus Cake:

  • 150 gr sugar
  • 3 large eggs
  • 150gr butter
  • 150 gr self-rising flour
  • 1 orange
  • 1 lemon
  • 1 table spoon baking powder

Ingredients for the Syrup:

  • 1 orange
  • 1 lemon
  • 2 table spoon of sugar

  • Preheat the oven to 200 degrees calcium (390 degrees Fahrenheit).
  • Mix sugar and eggs.
  • Mix flour and baking powder.
  • Zest one orange and one lemon and juice them.
  • Add in the flour mix to the sugar and eggs mix.
  • Add in the zest and the citrus juice.
  • In a cake pan or mold, place very thin slices of orange or lemon or blood orange (it will taste better if you peel these thin slices, but it will look better if you leave them on!).
  • Pour the cake batter in the mold, and let it cook for around 40 minutes.
  • Juice the other orange and lemon and add in about two table spoons of sugar over medium heat and stir until it forms a syrup.
  • Remove the cake from the oven and let it cool down for a few minutes and remove from the mold.
  • Drizzle the citrus syrup on top of the cake and let it cool down completely before you serve.
