Madeleine (French butter cakes) Recipe

Ingredients for 24 Madeleines:

• Unsalted butter 125 gr (4.5 oz.)
• 1 Lime
• All purpose flour 150gr (5.29 oz. / 1.2 Cups)
• Sugar 130 gr (4.5 Oz / 0.65 Cup)
• 3 eggs
• Baking powder 2 tablespoons
• Honey 2 tablespoon
• Salt ¼ teaspoon



1.Preheat oven to 464 degrees F (240 degrees C). Butter your madeleine molds (or any other molds you are using);
2.Melt butter in microwave, set it aside;
3.In a mixing bowl, beat eggs and constantly add sugar and honey; continue beating at high speed until mixture is thick and white;
4.Combine flour, salt and baking powder in another bowl;
5.Stir flour mixture to eggs mixture and gradually and gently folding after each addition;
6.Add lemon zest and melted butter; quickly but gently fold butter into batter;
7.Spoon batter into molds; it will mound slightly above tops;
8.Bake 5 to 100 minutes, or until Madeleines are golden;
