Asparagus Salad With Hard-Boiled Eggs Recipe
Hi everyone! Today I am sharing one of my all-time french classic recipes. and I have to confess the main reason is that it’s vegetarian and more importantly it’s so easy and quick to make and also you only need a few ingredients. Now that spring is around the cornet, asparagus will be available in most of the cities and countries and is the best time to try my recipe. Ingredients for my asparagus salad with hard-boiled eggs:
Serving of two people
- one big bunch of asparagus
- Two hard-boiled eggs
- Parmesan cheese (here I used Comté cheese instead)
- One orange
- Olive oil (two table spoons)
- salt and pepper
Cook the asparagus in boiling water for 5 minutes. drain them in cold water
Cook eggs in hard boiled water in 5 minutes and again drain in cold water.
Place the cooked asparagus in a plate and place the eggs on top of them.
shred some cheese and add to the asparagus and eggs.
Juice the orange and mix with olive oil and salt and pepper and spread over your salad.
