Speculoos (Cookie Butter) Cheesecake Recipe:
Being a HUGE fan of speculoos, I have been dying to try this speculoos cheesecake recipe, and I finally made it for a family gathering last weekend. The recipe is very straight forward and I promise, you’d love it!
- 200 gr European-style cookies like speculoos cookies (I used the trader joes speculoos cookies)
- 70 gr butter
For cheesecake filling:
- 600gr light Philadelphia cream cheese
- 3 eggs
- 100 gr sugar
- 1 coffee spoon vanilla extract
Heat the oven to 350 degrees Fahrenheit. In a springform pan with parchment,
make the crust: out the speculoos cookies in food processor and turn them into fine crumbs, and combine with the melted butter. Flatten the mixture on the top (and if you wish the up sides of the springform pan and set aside.
Make the cheesecake filling: beat cream cheese, eggs, sugar and vanilla extract together for about 3-4 minutes.
Assemble: pour the cheesecake filling over the crust and decorate with trader joe’s cookie butter spread.
Let it cook for about 30-40 minutes, let it cool overnight and enjoy 🙂
